Hearty Black Bean Turkey Chili
This one-pot recipe comes together easily, and even though it only needs around an hour to simmer, ingredients like Calabrian chilis and barbecue sauce add depth and flavor. To make this recipe vegetarian, you can substitute vegetable broth and use finely chopped roasted mushrooms or 1 cup rehydrated texturized vegetable protein (actually easy to find at most grocery stores!), or just add more beans!
Ingredients
- 1 large onion, diced
- 3 cloves garlic
- 1 lb ground turkey
- 2 tablespoons cumin
- 1 tablespoon chili powder
- 1 tablespoon smoked paprika
- 1 tsp adobo seasoning
- 1 tsp ground coriander
- 1 tsp kosher salt
- 1⁄2 can of beer
- 2 bell peppers diced
- 1 28 oz can of fire roasted diced tomatoes
- 2 cups chicken broth
- 1⁄4-1⁄2 cup barbecue sauce
- 1-2 tablespoons chopped Calabrian chili peppers (from a jar)
- 1-2 chipotle peppers with a tablespoon of adobo sauce (from a can)
- 2 – 15 oz cans of black beans
- 1 cup corn: fresh, fire roasted or frozen
Steps
Pour a couple of teaspoons of olive oil into a Dutch oven, let it heat up and then add diced onions.
Grate in garlic cloves and sauté until translucent.
Add the ground turkey, cumin, chili powder, smoked paprika, adobo, coriander, salt and stir until turkey is cooked through and browned.
Add in diced bell peppers and stir until softened.
Add beer and deglaze the pan with, if necessary.
Stir in tomatoes, chicken broth, barbecue sauce and peppers and bring to a boil.
Add corn and black beans and simmer for 45 min – 1 hour.
